I just put in new toyota struts and my car is goin to the left, it was going straight before? Do you always have to align your car when you put in new struts?

MOST of the time, yes.... some ppl are lucky enough to not need an alignment... but its just better and recommended to have it checked

IMO, Id do it so my tires wont get eaten away

Get the alignment done. You will eat up more in rubber than that alignment costs.

I chewed through my Toyo T1-S's in 6k when i didn't get the alignment done after having a strut mount replaced.
