i'm talking about the piece of rubber (well mine's rubber anyways) that sits next to the clutch. anybody know how i can change that to a silver metal plate to match my pedals?

It's called a dead pedal. Look at any of the aftermarket pedal kits, most of them come with a matching dead pedal.
