7.5" wide with anything from 35 to 40 should be no problem. (half an inch is about 6mm...so you have 3mm more each way to work with for offset).
And stock wheels sit inward because thier 6 inches wide. When you add two more inches, the 5mm difference in offset wont make much of a difference for how the wheel "sits".
You may not rub with +35s. Cant tell til you put them on and hit a bump or pothole with the rear wheel/s. 40s def will not rub the fender.
I believe his extension is 646 btw.
