headers = exhaust manifold
It's the piping where the exhaust gases exit the engine and go to the actual exhaust piping. It's the first pipe. The OEM one is called the Exhuast Manifold while the aftermarket is called Headers.
The stock one is very restrictive. It puts all 4 (in this case) into 1 big hole and makes it go through the exhaust piping. These headers have long piping for each cylinder, which makes the exhaust gas flow faster (like the garden hose effect, you need the right size for the perfect flow. Too small and it'll flow harshly and slow, too big and it'll drizzle out)
That's barely hitting the basics of what a header is... if you want to read more into it (longer headers, shorter headers, 4-2-1, 4-1, etc) you can learn about what type of benefits each configuration offers, and why they do that.
