Get some reusable silica gel containers and place them around the car... very good at keeping the moist musty air out and preventing mold/rust/fog inside. I have them velcro'd in the trunk and passenger areas, and one behind the clock under the dash.
Oh, also, spray some febreeze down all the vents and run them on high without the AC off for a few minutes; turn it on fresh air and spray febreeze through the cowl vent (under the windshield wipers) thoroughly; if that doesn't work, have the AC system cleaned next time you go to get it serviced (expensive but if mold's built up in the coils there it needs done). I have mold allergies and it drove me INSANE whenever I got in the car until I cleaned it all.
