Wheel Setup Confusion

Well I tried reading up but I've looked at some the topics on people and their wheel setups. What gets me is that if i'm read correctly. a 35ish offset on the wheel for a probably 18x8 will be ok. the 40 offset will cause rubbing?

ATM i'm looking at a wheel/tire package 18x8 40offset(think 38 is the other possible offset) and the tires are 235/40/18

I'm wanting to avoid rubbing/rolling.

So someone please fix me up please @.@ My brain ain't technically smart in car mechanics except for computers which I specialize in. The offset is making nervous of whats possible for me to select.
