I've noticed that every time I check the level it is way below the line. I've checked it cold and warm and every time it's about at the same level (about a thumb's width from the top of the hose). I've filled it to the line with a 50/50 mix multiple times but when i check it again after a drive there's coolant outside the container like it overflowed and came out the top.

There's no check engine or anything coming on so I'm assuming everything is working ok but the level just worries me with summer weather just around the corner.

Is there a problem with my car or is that normal for our cars?

You are supposed to do 50 % anti-freeze, 50% water which usually accounts for 1 gallon of anti-freeze, and 1 gallon of water.

True that.
1 gallon of antifreeze, and 1 gallon of distilled water.
For the coolant reservior i traded wit my dad's 98 Camry.
And no more leaks, i think the leaks of the Solara coolant reservior is the style it was made.
Not very smart.
So i would suggest gettin' an 98 Camry V6 coolant reservior from a slavage yard, and that should solve your over flow problem.

Coolant expansion tank leaks out the top. I just removed the cap, put a piece of plastic bag over hole, put cap back on and trimmed bag to fit neat. No more leakage.
