i was driving this morning and noticed my pickup wasnt that great? does it have something to do with the moisture content in the air? like will a cold day be better than a warm day, and will dry weather/air be better than wet weather/air? or is it all in my head?

I feel it too... rainy weather makes the performance drop... I think the best condition is low humidity/cool day

think of it this way, if your engine can only suck in X volume of air at once, during a cold dry day there is more o2 molecules contained in the air than on a warm humid day.

As the temperature is raised, air expands.
